Another favorite Christmas cookie is my mom’s pineapple cookies. These are soft, not too sweet with a great flavor of pineapple. We always found these on our cookie plates as well. Some of the others treats on our Christmas plates from mom would be fudge, peanut butter fudge, peanut butter cookies, no bake oatmeal cookies, oatmeal raisin cookies, and snowballs. I have a batch of fudge setting up now and outside of maybe a batch of banana cookies and maybe some peppermint swirl cookies, I will be pretty well finished with my baking. Yes, I am going to give you the recipe for these delicious cookies below.
Pineapple Cookies
- 1/2 cup shortening
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 cup crushed pineapple (1 small can undrained)
- 1 tsp vanilla
- 2 1/4 cup flour
- 1/2 tsp baking powder
- 1 tsp soda
- 1/2 tsp salt
Cream sugar and shortening. Add egg and beat well. Add pineapple and vanilla mix. Add flour, baking powder, soda and salt. Drop by teaspoon on cookie sheet bake at 375 degrees for 10 minutes.
