Pumpkin Pies

Of course you know after we finished playing with our pumpkin and I cooked it off we had to make pies. If you missed how I processing my pumpkin you can find it here. I love the whole process of going from this:

Before I go any further let me say I have a lot of pumpkin left over that will be froze in pre-measured packages for more pies and other yummy treats.

My Recipe for Homemade Pumpkin Pie:

  • 1 1/2 Cups sugar
    1 tsp salt                                                                                    
    2 tsp. ground cinnamon
    1 tsp ginger
    1/2 tsp ground cloves
    4 large eggs
    4 cups pumpkin
    2 cans evaporated milk
    2 uncooked 9 inch pie crusts
     
    Mixsugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs in a large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shells.
     
    Bake at 425 for 15 minutes. Reduce heat and bake at 350 for 40 – 50 minutes until knife inserted in center comes out clean.
     
    My favorite part is always having extra for some pumpkin custard. Now we are ready for whip cream and to enjoy our delicious pie for desert.
     
    Pie crust recipe for 2 nine inch single crust pies or 1 double crust pie
     
    1 cup plus 2 Tablespoon shortening
    2 cup all purpose flour
    1 tsp salt
    4 to 6 tablespoon cold water
    Cut in shortening into flour and salt until small crumbs are size of small peas. Sprinkle in water, 1 Tablespoon at a time tossing with fork until all flour is moistened and pastry almost cleans side of bowl.
    Gather pastry into two equal balls, roll out on slightly floured board. Line pie tins.
     

It wasn’t long after my pies cooled that they had to take their place in the highest part of my kitchen.

I bet you can all guess why they ended up here. I discovered after dinner that I had a little mouse in my kitchen. This little mouse wasn’t very sneaky and sure left her little marks all over my pie. Yes, I did catch that little mouse, surprised her actually. The funny part though was when my pies disappeared, that poor little mouse seriously looked in every cupboard, the oven, the dishwasher, and the refrigerator, just trying to locate the pies.

Just look at that little smirk on my mouse’s face. Now if you can’t laugh over that face I don’t know what you can laugh about.
